What to Know
Tinned fish lovers already know Siesta Co. — the sleek Spanish brand behind those beautifully packaged conservas that stock every cool-kid pantry and indie grocer shelf. Now, founders Lucia Flors and Carlos Leiva are stepping out of the can and into the kitchen, teaming up with Botanica’s Heather Sperling to launch Bar Siesta, an all-day hang in Silver Lake.

By day, the tiny spot leans snacky: think bocadillos, olives, croquettes and, of course, their signature tins served with all the right extras (jamón, Marcona almonds, a glass of crisp wine). By night, it’s a full-on tapas takeover, with a seasonal menu of small plates that play well with booze.

It’s packed most nights, like a tin of sardines, but somehow still chill enough for walk-ins. The croquettes are hot and crispy, the grilled prawns are swimming in smoky oil and the drink list is stacked: Spanish wines, vermouth on draft, cider from the Basque Country and plenty of sherry.

Whether you're popping in for a snack or staying for a slow, wine-soaked dinner, Bar Siesta isn’t trying too hard. Come for the tinned fish, stay for the drinks, linger for the energy. It’s exactly where we want to be eating right now.
What to Order
Behind the menu is Chef Keith Phillips (ex-Rustic Canyon and Roister), who’s bringing the heat with tapas that range from classic to creative. Everything’s rooted in Spain, down to the ceramic plates and wall art. And up front? A full-blown mercado, stocked with conservas, Spanish wine, fancy vinegar, cheese, spices — the kind of pantry haul that makes you feel very European.
Conservas

You’ll spot the lineup of colorful tinned fish cans as soon as you walk in. The menu features eight picks from co-owner Siesta Co.
Gildas

The OG pintxo. Anchovies bring the briny funk, pickled peppers add a zingy kick and salty olives tie it all together. Pair with vermouth.
Sherry
They pour 10-12 different sherries by the glass at the bar daily.

Gambas

The prawns are plump, snappy and grilled to perfection. The smoky paprika oil steals the show — ask for grilled bread to soak it all up.
Olive Oil Ice Cream

Olive oil ice cream melts on contact, topped with a drizzle of grassy EVOO and a splash of sherry.
